Pros:- Easy to use- Takes only a few minutes after set-up to get almost perfect blade that shaves hair and cuts newspaper- OK storage caseCons:- Should come with a stand by default. Have to use a vise or a clamp right now cause I'm still waiting for my stand, flipping the jig take a few more seconds.- Case is cheaply made but works.

Nice system that was easy to learn with consistent results. The clamps rubbed the finish off of one of my anodized blades though. I added rubber tape that seems to have resolved the. The case is convenient but mine does not snap closed due to warping. I also skipped buying the stand to make my own with a simple 3/8" carrage bolt and some wood.

I've been a lansky fan for 20 years. if you're serious about keeping a good edge on your kitchen knives and lets be honest, even if you spend $300 on a wusthof it will loose it's edge eventually. This kit provides a great edge on all my knives. Once you have that edge established, all I have to do to maintain it is a couple passes with the fine stone and then the polishing stone and it's right back to razor sharp. The "T" handle guide ensures you're getting the same angle with every pass, making it almost foolproof.

I've been sharpening my own knives with a whet stone since I was a kid and have no trouble keeping a razor edge on my knives this way. But it's time consuming, so I was very much looking forward to receiving this because I thought it was going to handle the geometry of the process and make sharpening quicker. I couldn't have been more disappointed. For starters the clamp that came with my set had rubber inserts at the end where the knife goes. I'm sure the intention here was to better secure the knife while preventing scratching of the blade but the actual result of this is that it's impossible to get the clamp tight enough to prevent the knife from moving. Not only does the knife move back and forth in the clamp, it tilts down slightly as soon as you place the stone on the blade. Even the slightest tilt completely ruins the angle on the blade. The whole point of this system vs crock sticks or just a standard stone is that the angles are supposed to be perfect thanks to the guide rods. Well once that blade tilts even the slightest amount, that is lost. I've also noticed that on thinner blades, such as filet knives, when putting the stone on the blade they tend to bow at the ends, away from the clamp. Again, this changes the angle closer to the handle and top of the blades where it bows versus the middle of the blade where the clamp holds it more firmly.I've gone back to these this kit several times just to make sure I wasn't doing something wrong or hoping maybe it just takes practice, but every time I end up back on my whet stones doing the job the old fashioned way.

I've always been a fan of other sharpening techniques, several of them, all of which keeps my knives plenty sharp. However, this method is much faster and easier and in some cases as effective as any other method, and in some cases I can get a better edge if I use the old-school technique. But, this is new-school. It works and it works well. I hope you all give it a try.I did order a more expensive kit than what they sent me. I haven't called to complain. Too much hassle.

I thought I was all cool sharpening my kitchen knives with a plain old stone. The first couple goes yielded good results, but eventually I came to understand that I had completely destroyed the bevel on my knives. I did not grow up on a farm (like everyone else here, apparently) and so I seem to have no ability to hold a consistent angle while using a stone. As a result I ended up rounding off the bevel on the knives over time.I bought this kit as a last-ditch attempt to save the knives. As such, I wasn't worried about ruining them and was free to following the instructions on the video and experiment as I attempted to cut a new bevel on the knives. I am happy to report that I was successful at creating very nice edges on the blades. Even on the 8" chef I simply mounted the clamp in the middle of the blade. I would guess that the angle of the bevel is "wrong" at the tip and near the handle as a result, but it's still 1000x better than what I was doing, and as long as I'm consistent with clamp placement I should be able to maintain that edge.I added a ceramic ultra fine hone to the kit. In the short term I probably would have been better off with the extra coarse to help me cut the new bevels faster, but in the long run I hope I'll get more use out of the ultra fine hone. Finishing with the ceramic is very satisfying and gives the edge a nicely polished shine.The bit about using oil to clean the hones by "floating" the metal out of the pores was a revelation for me, and certainly seems to work. Clean regularly if you're cutting a new bevel, it'll save you a lot of wasted effort.Probably a well known trick, but while experimenting I found that using an overhead light was the best way to know if I was making progress on the coarse cut. After a few passes you get a new glint for the beginning of the repaired bezel. If you tip the knife farther away from the light you'll pick up other glints for previous bezels, or even a sustained glint for a rounded bezel. Keep going until that's gone. At the very end you'll have a tiny glint that seems to float off the edge of the blade: almost there! Keep going until even that is gone. I suspect this is similar to the advice I've seen to grind until you raise a burr on the other side, but I found it easier to look for the glint than to feel for the burr. Make sure there's only one light above you, or you'll get multiple glints even with a good bevel, one from each light.

Purchased the Lansky Universal Kit to sharpen a pocket knife that I used at work every day. I have tried other stone sets but could never get a good edge or when I did, it didn't last long. I was very surprised the first time I used it. It was incredible. I had a razor sharp edge in about 15 minutes. Takes a few minutes to get all the metal rods into the stones and then cleaning the stones afterwards. This was the first time in years that I could go an entire month without having to resharpen the knife. I plan on purchasing the 1000 stone, the 2000 stone and the leather strop. This kit is worth every penny and more.
